Pear cream

Introduction

This is one of my favorite vegan dessert recipes. Pear cream is an incredibly versatile item - You can pour it over just about any sweet item, or use it on any item that needs sweetening. The best part (aside from the taste, of course) is that it contains no added sugar. It is definitely a favorite of everyone I’ve made it for.

A good blender

Ingredients needed

1 cup of raw cashews
1 28oz (796 mL) can of pear halves in juice (no sugar added)
1 teaspoon vanilla
1/4 teaspoon of salt (optional - but it brings out the sweetness)
1 teaspoon honey (also optional - add for sweetness)

How to make it

Step 1: Place raw cashews in a colander. Rinse in warm (or hot) water.

Step 2: Place rinsed cashews in blender. Add all the juice from the can of pears, but not the pears themselves. Blend until very smooth - a minimum of 2 minutes. Do not under blend.

Step 3: Add pears, vanilla, salt and honey. Continue blending until you have a smooth and creamy consistency. Add a bit of water, soymilk or pear juice if necessary.

serving suggestions

Chill and serve over hot cereals like oatmeal or cream of wheat or cold cereals like granola and wheatabix. Serve as-is over fresh fruits like strawberries, blueberries, raspberries, blackberries and bananas. Alternatively, you can also serve it with pastries and other desserts.
